WHOLE 30 Approved Chicken Nuggets (serves 4):
1 lb. organic boneless chicken breast, cut into strips or cubes
1/2 Cup Almond Meal
1/4 Cup Coconut Flour
3/4 Cup Flax Meal
1 tsp. Sea Salt
Pepper to taste
2 tsp. Garlic Powder (I used more because I love garlic)
1/2 tbsp. Trader Joe's 21 Seasoning (or whatever seasoning you like)
1 tbsp. coconut oil
Take dry ingredients and mix together. Next, crack egg in a bowl and whisk. Place your dry ingredients, egg and chicken in a row. This will be your assembly line for covering the chicken in the egg and dry ingredients. Take chicken, dip into the egg to coat then dip into the dry ingredients.Take 1 tbsp. of coconut oil and place in a frying pan over medium heat. I did two versions. I cut the chicken breasts into nuggets and fried them that way and I also cooked them as a strip. Both came out great. If you do the strips, you can still cut them into nuggets once they have cooked. Cook for roughly 15 minutes or until chicken is completely cooked. Cut into nuggets or leave as strips and serve on your favorite serving dish with Veg'd Organics Veggie Packed Ketchup!
